Vegan and Gluten Free Options
I had some verrrrry ripe bananas hanging out in the fridge so I thought no better way to put them to use than to bake. These cacao cookies are probably the easiest vegan cookies you could make considering there’s only 3 main ingredients, one of which being the cacao powder. All you’ll need are some ripe bananas and rolled oats. In this recipe I’ve included my favorite add-ins (one of which making them a bit magical, hint- Moon Juice’s dusts) but feel free to modify as you see fit.
(all organic if possible)
2 medium ripe bananas
2 cups of rolled oats (I used gluten free)
1 Tbsp fair trade cacao powder
1 tsp vanilla extract (optional)
1 Tbsp chia seeds (optional)
Handful of walnuts (optional)
1 scoop of Vital Proteins Collagen (optional, omit if vegan)
1 tsp of Moon Juice’s Beauty Dust (optional)
Preheat the oven to 350 degrees F.
In a blender or food processor, pulse rolled oats until it becomes a flour-like consistency. It doesn’t need to be completely blended, I typically keep mine a little thicker. The rolled oats also don’t need be blended. I just like the consistency of the cookie better when I do.
In a large mixing bowl, mash the ripe bananas, and combine the blended oats. Mix, mix, mix. Then add the cacao powder. Mix again. You might have to use your hands to combine all the ingredients together.
If using add-ins place the rest in the bowl and mix again until everything is combined and forms a batter.
Scoop the batter onto a lined baking tray and bake for about 18-20 minutes.
Store in an airtight container for a couple of days and enjoy!
